This prevents pieces of food from blocking the steam holes and valves, which can cause the liquid to boil over. In other words, a 5-liter kazan can only be used to cook up to 3 liters of any dish &ndash; no more. Keep this in mind when choosing a kazan.&nbsp;

&nbsp;2. Before using it for the first time, you must season your kazan. This will ensure it lasts for years to come and can be passed down to your children and grandchildren. Seasoning your Afghan kazan with oil will remove any traces of the manufacturer&rsquo;s oils and will help prevent food from sticking to it. 
3. Do not leave the kazan on a high heat for long periods of time. It is better to turn down the open fire while cooking; you can also periodically remove it from the coals for half a minute at a time. Preparing and caring for uncoated cast-iron cookware 
If you have decided on an unprocessed cast-iron pot, you will need to do a few things before using it. This is to remove any traces of manufacturing oils and to prepare it for further use. 
1.&nbsp;&nbsp; &nbsp;Wipe off any oil with a dry cloth. 
2.&nbsp;&nbsp; &nbsp;Wash the product with hot water and detergent. 
3.&nbsp;&nbsp; &nbsp;Coat the pan with salt and heat it (for 40-60 minutes) - this will get rid of the smell of the manufacturing oil. The best way of doing this is to bake the pan in an oven set to 175-200&deg;C, but a conventional stove or an open fire will also work. 
4.&nbsp;&nbsp; &nbsp;Grease the pan with vegetable oil (oils that dry well, such as linseed, tend to work the best) and bake it for a further 25-30 minutes &ndash; this procedure will create a protective layer that prevents corrosion and has slight non-stick properties.

Once you have gone through this somewhat lengthy procedure, your cast-iron cookware will be ready for use. You can skip these steps if you have purchased cookware that has already been pre-prepared at the factory.
